Ingredients

  • 1 pre-made pie crust
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup onion, finely chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until translucent.
  3. Add the chopped spinach to the skillet and cook for an additional 2-3 minutes, until wilted. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg until well combined.
  5. Stir in the sautéed spinach and onion mixture, along with the crumbled feta cheese.
  6. Place the pre-made pie crust in a 9-inch pie dish and pour the spinach and feta mixture into the crust, spreading it evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is lightly golden.
  8. Allow to cool for a few minutes before slicing and serving.
