Instructions
- Beat cream cheese, sugar, and vanilla until smooth.
- Whip heavy cream to stiff peaks and fold into cream cheese mixture.
- Mix diced strawberries with sugar and let sit 10 minutes to macerate.
- Mix crushed cookies with melted butter until mixture resembles wet sand.
- Layer crepe with filling, crumbs, and strawberries. Roll tightly into sushi shape.
- Wrap rolls in plastic and refrigerate at least 1 hour.
