Description

A delicious Thai-inspired dish featuring meatballs made from ground chicken simmered in a rich coconut curry sauce.


Ingredients

  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tsp fish sauce

Instructions

  1. Mix ground chicken, breadcrumbs, and egg together in a bowl.
  2. Form the mixture into meatballs and brown them in a skillet.
  3. In a separate pot, simmer coconut milk, red curry paste, and fish sauce.
  4. Add the browned meatballs to the sauce and let them simmer for 10 minutes, or until fully cooked through.
