  • 1/4 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • 2 tablespoons of honey or maple syrup
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Beans: Start by opening and draining the canned beans. Rinse them under cold water to remove excess sodium and preservatives.
  2. Chop the Vegetables: Wash and chop bell peppers, red onion, and parsley into uniform sizes.
  3. Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper.
  4. Combine Everything: In a large mixing bowl, add the drained beans, chopped vegetables, and parsley. Pour the dressing over and mix gently.
