Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced (red or yellow)
  • 1/2 cup black olives, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  2. Prepare the Vegetables: In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, bell pepper, sliced olives, and red onion.
  3. Make the Dressing: In a small bowl or a jar with a lid, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Shake or whisk until well combined.
  4. Combine Ingredients: Add the cooled tortellini to the bowl of vegetables. Pour the dressing over the salad and gently toss to combine all ingredients.
  5. Add Final Touches: Fold in the chopped fresh basil and grated Parmesan cheese. Adjust seasoning with additional salt and pepper if needed.
  6. Chill and Serve: Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
