- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup thick Greek yogurt
- 1 medium cucumber, finely diced
- 2 garlic cloves, minced
- 2 tbsp fresh dill, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups mixed greens or lettuce
Instructions
- Gather all ingredients to streamline the cooking process.
- Preheat grill or skillet over medium heat. Season chicken with salt and pepper, then cook until golden brown and juices run clear (about 6-7 minutes per side).
- In a bowl, mix Greek yogurt, diced cucumber (squeeze out excess water), minced garlic, dill, lemon juice, olive oil, salt, and pepper until smooth.
- Once cooked chicken has cooled slightly, chop it into bite-sized pieces and combine with the tzatziki mixture.
- Serve over a bed of mixed greens or lettuce and garnish with extra dill if desired.
Notes
- For extra flavor, marinate the chicken in the yogurt mixture for a few hours before grilling.
- This salad is perfect for meal prep and can be stored in the fridge for a couple of days.
