- 6 cups cubed seedless watermelon (about 1 small watermelon)
- 8 ounces feta cheese, preferably block feta in brine, crumbled or cubed
- ¼ cup thinly sliced red onion
- ¼ cup fresh mint leaves, roughly chopped
- 1 cup diced cucumber (English cucumber recommended, optional)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar (or balsamic glaze for a sweeter option)
- 1 tablespoon lime juice (freshly squeezed)
- ½ teaspoon honey (or maple syrup)
- ¼ teaspoon salt (or to taste)
- ⅛ teaspoon black pepper (freshly ground, or to taste)
Instructions
- Start by cutting your watermelon in half. Then, cut each half into slices about 1-inch thick.
- Cut the rind off each slice and then dice the watermelon into roughly 1-inch cubes. Place the cubed watermelon in a large bowl.
- Thinly slice the red onion, either using a mandoline slicer or a sharp knife. Optionally soak in ice water to mellow the flavor.
- Rinse the fresh mint leaves, pat them dry, and roughly chop them.
- If using cucumber, dice it into roughly the same size as the watermelon cubes.
- Crumble or cube the feta cheese, rinsing under cold water if it is very salty.

- Chilling the salad before serving enhances the flavors.
- Adding other fruits like berries can provide extra color and sweetness.
