  • 8 ounces feta cheese, preferably block feta in brine, crumbled or cubed
  • ¼ cup thinly sliced red onion
  • ¼ cup fresh mint leaves, roughly chopped
  • 1 cup diced cucumber (English cucumber recommended, optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar (or balsamic glaze for a sweeter option)
  • 1 tablespoon lime juice (freshly squeezed)
  • ½ teaspoon honey (or maple syrup)
  • ¼ teaspoon salt (or to taste)
  • ⅛ teaspoon black pepper (freshly ground, or to taste)

Instructions

  1. Start by cutting your watermelon in half. Then, cut each half into slices about 1-inch thick.
  2. Cut the rind off each slice and then dice the watermelon into roughly 1-inch cubes. Place the cubed watermelon in a large bowl.
  3. Thinly slice the red onion, either using a mandoline slicer or a sharp knife. Optionally soak in ice water to mellow the flavor.
  4. Rinse the fresh mint leaves, pat them dry, and roughly chop them.
  5. If using cucumber, dice it into roughly the same size as the watermelon cubes.
  6. Crumble or cube the feta cheese, rinsing under cold water if it is very salty.
