- 2 lbs russet potatoes, peeled and cubed
- 1/2 cup mayonnaise
- 2 tbsp orange zest
- 1/4 cup orange juice
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Boil the cubed potatoes in a large pot of salted water until fork-tender, about 10-12 minutes. Drain and let cool.
- In a large mixing bowl, combine mayonnaise, orange zest, and orange juice. Mix well.
- Add the cooled potatoes, green onions, and parsley to the bowl. Gently toss to coat the potatoes evenly with the dressing.
- Season with salt and pepper to taste.
- Chill the potato salad in the refrigerator for at least 1 hour before serving.
- Garnish with additional orange zest and parsley if desired.
