  • 1 cup fresh corn kernels (about 2 ears of corn)

  • 1 cup crumbled feta cheese

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika
  • 1 avocado, diced (optional)

Instructions

  1. Preheat the grill to medium-high heat. Husk the corn and brush it lightly with olive oil. Grill the corn for about 10 minutes, turning occasionally until it is charred and tender. Once done, let it cool slightly before cutting the kernels off the cob.
  2. In a large bowl, combine the cubed watermelon, charred corn, thinly sliced red onion, and diced avocado (if using).
  3. In a separate small bowl, whisk together the olive oil, lime juice, honey, smoked paprika, salt, and pepper until emulsified.
  4. Pour the dressing over the watermelon mixture and gently toss to combine.
